How would I specify the image that affiliates/bloggers will use while linking to my website?

There is no limit to particular graphics or link anchors your affiliates have to be restricted to (unless you choose to do so) because they simply have to link to your site without any special scripts or tracking id (because we track referrals from affiliates based on the referring domain of the traffic and not tracking id) But it is always a good idea to have a default – ready to use graphics available to affiliates when they get approval notice from you. You can provide this graphics by uploading your image (100k size limit) on “Edit UI” page of campaign set up flow.
